Love meatballs but want a healthier version (no breadcrumbs)…..I
whipped these up in my kitchen and it turned out great!
If you have a juicer….saving the “leftovers” will save you a
ton of time. I usually juice 2 carrots, 1 apple and 3 cups of spinach/kale (I
used spinach…but use whatever you have on hand). Save the scraps and keep
refrigerated or use immediately.
Pre-heat the oven to 400 degrees
Ingredients:
I package of Jenny O Turkey ground or lean ground beef (about 1 lb)
½ cup of onion chopped finely
1 egg
Onion powder (I eyed balled this...use to your liking)
Garlic powder (I eyed balled this…use to your liking)
Salt and pepper (I eyed balled this...use to your liking)
1 cup of the ground carrots, apple and spinach/kale combination and mix
in a large bowl.
If you do not have or use a juicer than you will need to grate or cut
finely 2 carrots, 1 apple and 3 cups of any spinach/kale. Deep breathes…..it will be worth it J
Roll balls into small to medium size and place on a lightly coated
baking sheet (I used oil olive spray) Bake for about 20 to 22 minutes…check and
make sure you don’t over bake these because turkey tends to dry out more quickly
than beef.
Viola! Eat them as a snack or put it in spaghetti! Let me know if how
